Jaggery – 1 part
Water – 10 parts

Mix Ingredients
Add jaggery to a clean plastic container.
Add fruit peels.
Pour water and stir well.
Fermentation
Seal the container tightly but allow slight gas release (you can open the lid every few days).
Keep it in a cool, dark place.
Fermentation takes 2–3 months.
Maintenance
Stir or shake lightly once a week.
Release gas buildup to avoid bursting.
Completion
After 90 days, filter the liquid. (If mother culture/previously made bio enzyme added then only 30 days)
Store in bottles for use.
The leftover pulp can be composted.
